Kiwi Papaya Salsa

Free of: egg, soy, nut, sugar, oil
Makes 3 cups

1 cup peeled, diced kiwifruit, cut into 1/4-inch pieces (3 to 4 kiwifruit)
1 1/2 cups peeled, seeded, and diced ripe papaya, cut into 1/4-inch pieces (about 1 large papaya)
1/3 cup minced chives (2 to 3 bunches)
2 ripe plum tomatoes, seeded and diced
2 teaspoons freshly squeezed lime juice
1 teaspoon grated lime zest
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/3 cup finely chopped flat-leaf parsley

Combine the kiwifruit, papaya, chives, tomato, lime juice, zest, salt, and pepper in a nonmetallic bowl and toss to mix. Cover the bowl tightly and refrigerate for up to 2 hours. Just before serving, add the parsley and toss gently to mix. Taste and correct the seasonings. Serve chilled.
